Carrot Cake Oat & Tahini Bites


Ingredients:

1/2 cups rolled oats

2/3 cup tahini

1/4 cup raw honey

1 medium carrot peeled, grated

1 tsp vanilla extract

1/2 tsp ground ginger

1/4 tsp sea salt

1/2 cup unsweetened shredded coconut

 

Directions:

  1. Add the oats to a food processor and blend until it reaches a flour-like consistency.

  2. Add the tahini, honey, carrot, vanilla, ginger, and salt and blend until combined and the mixture holds together.

  3. Use a cookie scoop or a tablespoon to scoop out the mixture and roll it into balls in your hands. Repeat until all of the mixture is used.

  4. Roll each ball in coconut until evenly coated. Chill in the fridge for 15 minutes, and enjoy!

Matcha Energy Balls 


Ingredients:

1 cup almonds

3/4 cup hazelnuts

1 1/2 tablespoons of matcha

1 1/2 tablespoons coconut oil

1 cup pitted dates

1/4 cup unsweetened coconut flakes

1/4 tsp sea salt


Directions:

  1. Add the almonds, hazelnuts, green tea powder, coconut oil, dates, coconut flakes and sea salt to a food processor and blend until well mixed and sticky.

  2. Transfer to a medium-size mixing bowl. Form into even balls with your hands, roughly 1-inch in diameter. Dust with more green tea powder if desired. Store in the fridge or freezer until ready to enjoy!

Chocolate Peanut Butter Energy Bites


Ingredients:

1 cup rolled oats

1/2 cup ground flaxseed

3 tablespoons cacao powder

1/4 tsp sea salt

1/2 cup all natural 100% peanut butter

1/3 cup maple syrup

1 tablespoon unsweetened almond milk (optional)

 

Directions:

  1. In a large mixing bowl combine oats, flax, cacao powder, sea salt, peanut butter and maple syrup. Add almond milk if the dough is too thick and sticky.

  2. Roll the dough into balls about 1-inch in diameter. Chill in the fridge for at least 20 minutes before serving. Enjoy!

Baklava Energy Balls


Ingredients:

1/2 cup walnuts chopped

1/2 cup pitted dates

1 cup pistachios (divided)

2 tablespoons orange zest

1 tablespoon raw honey

1 teaspoon cinnamon

1/4 teaspoon ground cloves

 

Directions:

  1. In a food processor, add the walnuts, dates, and half of the pistachios. Blend until everything is combined into small crumbly pieces..

  2. Add the orange zest, honey, cinnamon, and ground cloves and blend again until the mixture is combined.

  3. Use a one-inch (2.5 cm) cookie scoop or a teaspoon to scoop out the mixture and roll it into balls. Continue until all of the mixture is used.

  4. Crush the remaining pistachios and place on a plate. Roll the bites into the pistachios until well coated.

  5. Store in the refrigerator for at least 30 minutes to set. Enjoy!
